Is there a way I get a copy of the AMCAS application or school specific applications ("secondaries?") ... I have some time before I will be applying, but I just wanted to get an idea..

Yeah, check the school specific subforums. They should get updated with the secondary prompts when people figure em out/receive them.

There is an AMCAS 2011 worksheet where you can see what information AMCAS gathers - http://www.aamc.org/students/amcas/amcas2011.htm

The school specific applications (yes, they're called secondaries, short for secondary applications) CAN, but don't usually, change every year (especially the essay prompts). That being said, you can look at this year's and even last year's school specific threads for what the essay prompts MIGHT be.
