Has anyone seen, through shadowing or otherwise, a person go into anaphylaxis and the administration of an epi-pen? I'm wondering if anyone has any firsthand experience in that. Also, are there any actual videos online of someone getting saved from an allergic reaction, not some of those tutorial videos?

Yes. In my case, I had to do an emergency administration of it on the field in a foreign country hundreds of miles from any sort of medical center. It was crazy. (My patient survived, thank God!)

What specifically are you wondering about it?

My dog went into anaphlaxis (after being stung by a bee i think) and I saw the vet administer meds that stopped the worst of the reaction. SO scary.

I've seen one. Bee sting and the Dr. just stuck it right through the pt's jeans and that was that....heart was certainly racing but the pt. felt way better.
