Can anybody tell me aside from Gen/org. chemistry, Bio, and physics...which other classes would be helpul to take that will help me get better prepare for the MCAT?

Some schools require a biochem course, others also require a couple of semesters of behavioral sciences courses. You have to check the schools you're looking at beforehand so you're not slugging through a human growth and development class when you really need genetics. As with the previous poster, a background in physiology and anatomy are also wise, but not "required". Best of luck...

I'm taking the MCAT this April, but from what I've found on the practice tests, Human Physiology is GREATLY beneficial, Biochem helps, and Cell Physiology helps (it's just about the same as Biochem). But to reiterate what scooter said, none are required, and all the necessary info (plus some!) can be found in the Science Review from TPR (I'm sure in the Kaplan one too, but I haven't looked at that material). Good luck!
