Are there any specific schools that you guys have come across that prefer direct mailing with professional letterhead from schools/Docs versus interfolio? I want to apply broadly and in order to save everybody headaches and time, I want to use interfolio because I hear its amazing. But are any schools not in favor of this?

Interfolio is fine to use with most schools. However, be sure each letter contains letterhead and a signature. I had problems with every school but two because a couple of my letter writers used the e-transmission method for submitting letters. This left out their e-sig and e-letterhead for some reason. If you're going to use interfolio, it is best to have your letter writers print out a version on official letterhead, sign it and FAX it to interfolio.
