Do Optometry schools have a way to find out how many other schools you've applied to?
also, what are the pro/cons of applying to several schools vs. only a few
 
No they don't know, and even if they did it's not a huge deal. Many of my interviewers were simply curious about the schools I was applying to and had nothing bad to say about any of them when I told them. This is not as ruthless a process as you may think; many schools just want you to go where you will be comfortable. The schools think of you more of a person and less of a number.

The benefit in applying to more schools is simply to increase your odds of getting in somewhere. The only downside is the cost.
 
They might ask you on a secondary application but it’s uusally optional. They will be able to see were you have been accepted towards the end of the cycle. There is a shared acceptance which helps them determine if students are holding multiple seats.
I wouldn’t apply to a whole bunch, I would narrow it down to the schools you are interested in. The costs can climb pretty fast and the time off from school / work can be difficult as well.
