Does the admission committee only see what you highlight as most important in the experience & achievements section?

No, they'll see all of them but just know what the ones you think are most important to you are

So admission officers get your application packet. The front page is a cover sheet, which lists your basic demographic info, GPA, and these top experiences and achievements you chose to highlight. So that's the first and last thing they see. Everything else else is on subsequent pages, which may or may not get skimmed through really quickly. (on average, 3-5 min per application)
