Applying to multiple summer internship programs

If I am applying to multiple different programs for the summer, what should I do if I get an offer from one before the others? Just take it and do it? Some of them pay more than others do, and I guess some would be preferred over others in terms of the type of research going on at that institution.
 
Delay as long as you can the deadline for acceptance from the earlier programs.

Some guy from one program wants to talk with me over the phone sometime soon, and I don't want to tell him I will join his lab if I get into the program and then not do it. Wouldn't it hurt me to tell him that I'm applying to other programs?

Then make it about him and not the program. These people have decades of experience in people accepting/rejecting/negotiating jobs/internships with others. Can't go in making false promises and ruining potential networking relationships.

Just be nice and express your interest in his lab and IF you decide on X program, you'd be his first choice to work with.
Thus, you boost his ego and if eventually you decide on another program it's because of the program, not him.

Thanks. Yeah I won't know if I'm in or not until like 2 months after I talk to him, so I'll just say I'd like him to be my mentor if I get in
 
There is actually a lady that wants to talk to me tomorrow about her lab, so IF she happens to ask me if I would like to join her lab, I should just say that I will join her lab if I decide to do that program? What if she thinks I won't commit and chooses the next guy that comes along expressing interest?

And there are also other people from the same program that agreed to speak with me in a few weeks.....
