I am just wondering what the etiquette is regarding calling/e-mailing a school to inquire why you got a rejection post-interview, or if its appropriate to contact your interviewer to see why you were waitlsited and what you can do to help get off the waitlist.

It probably depends on the school. However, I doubt asking the interviewers would help as they usually do not know much about the decision process but rather just file a report of your interview. (Although some are on the admissions committee and advocate on your behalf so I guess it depends on how involved your interviewer is in your application process.)

I know some schools hold an official meeting for rejectees to discuss what they can do to improve their application for the next year. My guess is some schools would be very receptive to your inquiries and would appreciate your interest in improving your application whereas other would just dismiss you.

If medicine is your dream, and if schools can tell you what's holding you back from achieving your dream, I'm sure they would.

If YOU knew what was keeping someone from achieving their dreams, wouldn't you tell them?

Sometimes schools don't do it just because of the sheer volume of applicants rejected vs. applicants accepted, not that they have a fundamental opposition to giving you this information.
