A couple of years I got a dog from the shelter. The shelter worker told me they had to bring him in on a stiff leash, but he absolutely loved me and I fell in love.

Well now, we still love eachother, but he doesn't like anyone else. I want to start introducing him to people and try and get him socialized, but I am afraid he might bite someone.

I was thinking about getting a basket muzzle for him, but I don't know the ramifications of it. I know the police use them, but for a hike lets say, will he be able to effectively dissipate heat? What about comfort? Are there any brands or materials I should get/stay away from?

I suggest google searching "appropriately fitting a basket muzzle". When fit properly a dog should be able to pant, drink, and bark. I'm sure you can find a good list of guidelines or video to show you how.
 
and don't forget that animals need to be trained to accept muzzles for the use of one to be a comfortable experience

Also, you need to consult a good trainer or vet behaviorist for an appropriate socialization program; putting a muzzle on won't prevent aggressive/fearful behavior, other injuries can still occur (being slammed in the face with a basket muzzle on can still break bones), and without appropriate, considerate training, the anxiety may be increased rather than resolved.
 
Greyhounds race in muzzles so I suspect they would be fine for hiking.
 
The blood donor greyhounds (and now one lab, incidentally) wear basket muzzles when they're out for their daily run-around time, and they do just fine with them. They wear them to prevent nipping, and we've had one in the past that liked to eat rocks...
