I am thinking about taking a Biology of Aging Class. Its BIOL 518 - Biology of Aging

"An introduction to the phenomenon of aging, including a survey of age-related processes and mechanisms of senescence emphasizing humans."

If it's mostly about the biological aspects of aging, classify it as BCPM.

Worst is they change it. Likely they'll keep it.

Can I call AMCAS or send them the course description to find out?

I am 99.9999% sure they will not change it if you classify it as biology. The AMCAS verifiers don't have enough time to do research into the content of your course. If they see that it is offered by the biology department and it has a biology-ish sounding name ("Biology of Aging" -- it even has the word biology in it!), then they will mark it as biology.
