How does teaching a class(maybe a lab class) at a college look as an EC to adcoms? I've heard it might be good, but I've also heard that this can lead to questions about your devotion to medicine vs teaching? Would this be something good for a applicant to do during a gap year?

Teaching (coaching, mentoring, TA, tutor) in a way that motivates and facilitates information retention adds appeal to your application. This is a valuable skill as its what most doctors do when interacting with patients.
 
I'm actually adjunct faculty and teach biology labs at a community college. I assumed the adcoms would look favorably at it as a leadership position. It's been a really cool experience! I've gotten to know a lot of the full time professors in my department and they are all super helpful when it comes to needing editors for essays or advice for medical school applications. There is a retired physician that teaches there as well that has been on an admission committee at his medical school that is especially helpful. Personally, I would suggest it.

If you graduate college and come back only to teach, then I think labs-only would still mean you could be faculty.

Most people teach college courses for laboratories while they earning a degree themselves, so most of the time it is LA,TA, GA, lab instructor, etc.

So if OP has graduated and coming back to only teach at the university, I believe the title could be correct as "adjunct faculty".

I have my bachelor’s degree and my position title is adjunct professor. I can only teach labs however.
