I don't have any problems with speaking to people, but I do want to get better at speaking to patients. Does anyone have a good recommendation for a book that covers how to interact with different kinds of patients, how to be a good listen and communicator, and how to gain information from people?

Bates is pretty good. Otherwise, try the medical interview or the psychiatric interview.
Honestly, this is more art than science. Practice and I mean in the pretend sense. Perfect practice makes perfect.
