Do students at Ross take summers off? Or do they go through the entire curriculum with only their 2-3 week breaks between semesters?

Not really. I mean you can if you want, but most people just go straight through to get back to the States asap.
There are always students that take a semester off if they have to for family reasons or whatever, but if you do that you end up a semester behind your friends, and that makes an already hard situation even more difficult.
