By What date/month?

Basically, my application has been sent out and recieved by the schools and I've sent in all my application fees. The only thing thats holding me back is one letter from my orgo prof. She said she sent it in in mid july and it hasn't been recieved yet by AADSAS. So we've decieded (her and I) to re-send the letter via express mail to AADSAS. My question is by what date/month should an application be complete to still be considered "early"; I know the obvious answer is the sooner the better but since the mailing business is out of my hands I wanted to gain a little perspective on the timeline.

Does it really matter anymore. you are sending it express as soon as you can. What does it matter if you call it late or call it middle or call it early. Won't change anything.
