cadaver work in residency

How much cadaver work is there in the average ophthalmology residency program?

None. Used pig eyes to practice suturing and making wounds.

For more of the oculofacial plastics stuff, you may get an opportunity to use cadavers, but that is not very common.
 
In general, there is little cadaver exposure in residency programs, as JMK mentioned. My program had access to a fresh tissue lab, which contained "lightly embalmed" cadavers. Many of us used this for oculoplastics practice. There were also scheduled dissection labs, run by the oculoplastics fellows and faculty. For eye cases, practice was on pig eyes.
