I haven't had very many positive experiences with Math professors at my school. Is it okay if I just CLEP out of calculus?(In terms of how would medical schools look at it) I would actually prefer self studying.

The overwhelmingly large majority of medical schools don't require calculus - just "mathematics."

Borrow or buy a copy of the MSAR for specific requirements.

This is true, but where every school states they require 2 semesters of math, they usually include this should be either 2 semesters of calculus or 1 semester of calculus and 1 semester of statistics.

Purely a personal preference, but I only took credit from high school and CLEP'd out of courses that were not a part of my major and not a medical school required/'highly' recommended course.

well if you never took calculus before, and are going to study for calculus just for the CLEP exam, then I would just suggest you take the course at your college. if you're trying to avoid specific profs for the class, then take calculus over the summer at a CC. really so far calculus (I) seems pretty straightforward, so i imagine it would be really difficult for a prof to butcher the class.
