Just wondering if Med schools know how many and which ones you applied to through AMCAS.

No, but they can see your acceptances in April - this is often a good thing since many schools offer additional aid to sway choice candidates...though far from everyone is that lucky 🙁

only schools that accepted you can see which other schools accepted you
this happens in the spring

As others have said, the schools cannot see what others schools you have applied to / interviewed at. But interviewers definitely asked me where else I had applied / interviewed at (although I don't think they are supposed to).
