Assuming you have a PC.

Connect iPod to computer, then in the Explorer go to Tools->Folder Options->View, then select "Show hidden files and folders" then close the menu. In Explorer navigate to the iPod->ipod_control->Music. Just copy all the contents of the music folder, all your music files are in there. The files will have incomprehensible names but the ID3 tag will be intact, just reimport into iTunes or use a renaming utility.

If you deleted them on iTunes, assuming you bought them on iTunes, and they are not on your computer, then probably not. If you purchased them on iTunes, it shouldn't be a problem to reload them.
