Is it final if you respond accepting an offer? or can you accept and continue to interview and possibly withdraw and accept another offer later?

Your deposit holds your spot in the class. The school can't really take that spot away if the acceptance wasn't conditional. You, however, are free to interview at more schools, accept another school's offer, go to medical school, go become a nun, etc.
