I've always wondered this. Because of some trouble I had to set a last minute retake for my exam, but I already have a score on file that they could potentially look at and grant me an interview for.
I am personally in the same situation as you. I have an MCAT score on file that's decent, but I decided to retake the exam again in August.
I emailed all 20 something medical schools I am applying to and asked regarding this. The majority of the schools will not review your application until they get your retake. However, some schools (most of all the UC schools) will start reviewing your application with your old score. If they were able to make a decision based on your old score, they will send you their secondary. If they feel like they need to see your retake to make a decision, they will wait. If they feel like you are not a good fit, they will reject you without even waiting for your retake.
Few schools have the options on their secondary asking you if you want them to wait for your retake, if you opt to not wait for the retake, they will begin reviewing your application and perhaps invite you to interview if your first MCAT score and your application is good enough. Otherwise, the majority of the schools will wait for your retake to begin reviewing.
