Can you put shadowing Doctors on a Undergrad app.?

If I shadow some doctors can I put this on a under graduate application. And if so does it look good at all?

You could count it as an extracurricular and write about it in various essays. At the undergrad level I don't know that it would be more valued than any other EC but they wouldn't disregard it.
