So my best course of action would be to NOT mention Honors Program on my AMCAS & secondary? And then if asked why my LORs say it, to tell them that at the time they wrote it, I had not yet decided to withdraw from it?I am going to play devil's advocate.
So you have LORs from writers saying you are in the honors program but then may be telling the school before acceptance that, "well, you see, I kinda, sorta dropped out of that program." Well that just ain't gonna fly
So lets say you dont tell them and you get accepted. Your acceptance agreement will have something along the lines you must have completed previously listed academic programs. How would the honors program be considered in this? Would this be something on your transcript or diploma? Would it be considered an academic program by an acceptance agreement? Depending on how the agreement is written, it certainly could. Well, that just ain't gonna fly.
These both raise ethical and perception issues at minimum. My Dad would have said "**** or get off the pot."
My opinion is the LOR writers are presenting what they knew at the time and that is legitimate view and that you can inform the medical school during the application process that you have decided to withdraw from that program. How/when you do that is another question. But I would not risk gaining an acceptance and then having a very uncomfortable talk with the Dean about this issue that could be about how they are rescinding your admission.

However I doubt anyone will either 1. Care that youre in the honors program right now and thusly 2. That you drop out.
But the morally superior (and practically correct) way to handle this is to make clear your intention to drop

No they need cause to rescind an acceptance. Just like an employer can't fire without cause. If you read the fine print it mostly covers falsifying credentials and potential legal/academic issues. However, some schools extend this to professionalism, which is more vague, case Western took a degree away from a student a few years ago for this
