You're should be fine if you're young and healthy. And a nonsmoker.

It’s unlikely that your top choice will change their financial aid offer based on the financial aid offer of another school. I am not sure it’s worth expending the funds to get to the interview merely for that purpose. I would only attend the interview if you might attend the other school if they were to give you a lucrative financial aid offer. However, I personally would not let the fear of COVID-19 dictate my decision.

Sure we may be young and healthy but we can easily transmit it to the older people in our family.
Just asked my ID colleague about this, and was told that those who are overtly symptomatic are the ones most likely to infectious.

If you wouldn't let the flu change your decision, don't let COVID change your mind. You're orders of magnitude more likely to get the flu.

You've mixed your reasons together, so let's just boil it down that you're trying to leverage interviews to see if you can get more scholarship money. Negotiation doesn't generally work that way. You're right to take the choice where your overall education debt is going to be lower, and chances are the ones that are your top choices on your list may not have you as a top choice on theirs. Tread carefully.
