Does anyone know if Recommendation Letter writers can re-access their letters once submitted? There's a chance I might be moving on to a better job soon and wonder if my current employer could re-access her submission to adjust the content.

Nope. Once submitted, you have to go through quite a bit to even get a letter removed.
