Do any medical schools specifically ask for certain LOR's in subjects they want to see letters from (like having to get an LOR from an organic chemistry professor, etc.)? Or is it general and up to the student to decide who to get LOR's from in the science field?

Most specific you'll ever see is "science faculty."

If you have a minor or a double major, especially out of the sciences, it would be a good idea to get one from a professor in that department. If you have participated in significant research and it is a sizable chunk of your application, you should have a letter from your PI...otherwise people will wonder.

A lot of schools I applied to asked for 2 science and 1 non-science letter from faculty who have taught you. That's the most specific I've seen.
