Short resume:
35 MCAT (practices were much higher but alot of people scored well below average for 8/15, probably wont retake though)
4.00 gpa
200+hrs research (no publish) and presenting at NCUR next spring.
100+ hrs shadowing
100+ hrs clinical volunteering
300+ hrs community volunteering
Student coordinator for internship program (Have received awards from our county for contributions to the community)
Lead activities coordinator for green club
Orientation leader
head of public relations for honors program
member of 3 honors societies (and active board member)
Coordinator for open mic club
Children's martial arts instructor 5+ years
Own martial arts (as hobby flavor) 15+ years
Fencing 3+ years
Member of Toastmasters 2 years
Presenter for science seminars and speakers at my uni for 2 years
Own my own business
Tutor for a local disenfranchised high school
And member of a variety of other clubs that aren't worth noting since they are just for fun (ie hockey club, DnD, etc)

What do you think my chances are for getting into a UC med school?

And what are some non-UCs I should add to my list? I have preference for California, and I am a CA resident non-URM, but come from a poor household.
 
Retaking would have definitely been a mistake, especially for CA schools. Other than possibly Stanford, which I've seen loves high end research experience (you should apply anyways!), you're competitive for just about all the California schools, depending on where you live (UC Davis vs. UC Riverside) and what you're willing to not do (Loma Linda).

Hopefully, gyngyn can come by and give some CA adcom expertise.
 
First, the app is great and it would be foolish to retake an already excellent MCAT. That would show judgment issues.

The lack of research would probably preclude UCSF and Stanford, but I'd go for all other CA MD schools, but read Loma Linda's list of don'ts. I am leery to suggest other research powerhouses, but it might be worth trying a few.

Other schools to consider would be Emory, Duke, Dartmouth, Mt Sinai, Brown (maybe), U Miami, Tulane, Loyola, U AZ, U CO, U NV (maybe), BU, Einstein, Hofstra, Va Tech, Vanderbilt or Northwestern, any new MD school, and maybe one of the Ivies.
