Im currently a junior in high school, have really good grades, and I'm greatly considering going to med school to become a pediatrician, or something of the like. For my major I'm thinking biology, chemistry, or a combination of both. My question is, what if throughout the course of my major I decide I can't deal with 4+ more years of schooling? I can still complete my major normally and get a job with that right?

Yes. You would benefit from having a major that feeds into your 'backup plan' if you end up not wanting to do medicine.

In the meantime, shadow pediatricians and see if you like it.
