Does anyone know what to do in the event that you indicated you were retaking the MCAT after your application has already been submitted but you decided later to just apply with your old score? Do I just notify the schools that I changed my mind?

Check with AMCAS. They have tagged your application as one that will be reporting a new score later. That tag needs to be removed and I believe that AMCAS has the power to do that. Get on that Monday. I've seen applications end up in limbo because the expected late score never arrived.
