do we write checks out to the dentals school's name? or is there information elsewhere stating to whom to make the check out. (ie the trustees of the university of ...") or do we use the university's general name?

I'd make it out to the school, unless you are given specific instructions otherwise.

Double check with the school's website and that pdf file given by aadsas.
like uc schools, i think u write the check to UC Regents.
