why is there no reaction for the following:
Zn + NaNO3 ??????????

So, Na is more electronegative than Zn and therefore Zn wouldn't be able to react. That means anything less electronegative can't react with more electronegative element for single displacement rxns.
Is it only for single replacement rxns?

It is not limited to single element displacement. Understanding the electronegativity series will help you decide which reactions are likely to occur.
