On page 58, EK bio says how "only prokaryotes can acquire energy from an inorganic source other than light."

It also says that "all know chemoautotrophs are prokaryotes"

I am confused because humans (eukaryotes) also acquire energy from inorganic source. what does EK mean?

Humans don't aquire energy from inorganic sources might be the misunderstanding.
We can only metabolize organic molecules for energy (carbs, fats, proteins).

The EK book is talking about prokaryotes that can fix carbon by obtaining energy from inorganic sources such as Sulfur and O2.
They then produce their own organic molecules from CO2.
