I finally arrived to the section in the application that asks for community activities. I'm not sure how much to put here! So far I have stuff like: AMSA, NSCS, overseas mission trips, and other school clubs. Should I mention things like: photography, cello player, or sports?

Previously, this section was called " Extracurricular and Community Activities." If it's still called that, the things that you listed that were hobbies could fit under extracurricular if you participated in some organized fashion. For sports, did you play on a team? For cello, did you take lessons or play in an orchestra? For photography, were they pictures for the school paper? Was it a class? If you just like to take pictures, I'm not sure that would belong there.
 
Well, according to the instructions, we may include sports and hobbies--but I would email the primary school(s) that you're applying to just to be sure. I listed a few hobbies in my application last year, and I was told at my file review with Iowa State that they should not be listed under 'Extracurricular and Community Activities' (but rather in your personal or explanation statement to show your diversity as an applicant) and that the adcom was confused as to why so many people did so.
