Why was there regret? That sounds like a positive experience and was probably one of the many things that influenced you to pursue dentistry. I don't understand how this would hurt you at all. I wouldn't mention anything about going against authorities..... Leave that part out and just talk about your overall experience I would say.
 
I went on a mission trip as well, and we were only allowed to assist. I would recommend you mentioning the assistance part and the experiences you had there that taught you about the state of oral care in Nicaragua, but stay far away from stating that you did actual dental work on patients. Dental schools really frown on that.
 
Although there is regret, I learned a lot from it. I saw how bad dental work in third world countries can get and how I should think in terms of care for the patient and not listening to authorities if it conflicts with my own beliefs.

Being a pre dent certainly qualifies you to judge the "bad dental work" of fellow practitioners. You might want to clean up your act on your view on "listening to authorities if it conflicts with" your own beliefs.
