I'm considering pushing back my May 8th MCAT to June 5th. If I do that will I be hurting myself since I wouldn't have a complete app on day 1. Or should I just apply to one school on day 1 to get verified quickest and wait for my MCAT to apply to the rest?

I'd suggest you apply early to just one school until you know your score. Even if you had the MCAT score early in June and your application was quickly verified, AMCAS won't release any completed applications to med schools until the last week of June. So having a completed application 7-10 days after that when your score is released will not put you at a disadvantage.

Yup, agree with the above. If that extra month will be useful, I would go for it! It won't make much differences as far as the timeline is concerned.

Just make sure you have everything (PS, descriptions for your activities, etc.) ready to go, so that you have more time to focus on MCAT as it gets close to early June.

Coming from personal experience, I would do exactly what Catalystik says here. Oh and transcripts take forever so send those as soon as you can. Good luck!

Agreed. It's amazing how often they seem to "get lost" on the way to the application service. In May, print the AMCAS form out with your AAMC number to give the registrar of each college you attended so that's less likely to happen.
