Should I write to schools that I have not heard from and tell them where I can be reached over Christmas break, or should I assume that they can infer that information from my permanent address of my AMACS and secondaries?
 
I wouldn't worry too much about it. So much is by e-mail these days, that most things you're going to get, outside of a rejection, are going to be by e-mail/phone. Even if there is some correspondence the most it will get delayed is about 2 weeks, right? Nothing is going to be so important you'll have to respond to it right away.

Is there a way you can leave a temporary forwarding address? If you're living in University housing they should have some way to do this. Otherwise, there's a form you can get at your local postal service that will forward your mail to another address temporarily.
