As the title states, is it preferable to engage in multiple clinical volunteering positions to gain experience in different settings, or longevity with one hospital to perhaps show consistency?

Ideally you'll find a way to get the best of both worlds. I'd call "longevity" one year at the same venue. After that, feel free to branch out, if you're not having fun. But if you are at a hospital, you generally have the option to get variety by changing to a new department every 6 months or so, and still have "longevity" at a single institution.
