Course history

One of my schools is asking for a written out list of all of my courses in psych, math, and science (in addition to transcripts). All of my grades in these classes are good except for a huge intro to environmental science class I took during my first semester of college. What I learned from the experience was that I have a tremendous amount of difficulty absorbing information in a 150 person lecture format, and I subsequently avoided taking any other huge classes as an undergrad. (This was pretty easy since I went to a small liberal arts college.) I know that this school is going to be receiving my transcripts but I don't like the idea of drawing a proverbial red arrow at this grade. Any chance it would it be okay to leave it off of the list?

I wouldn't. One bad grade isn't going to kill you, if your other grades are strong. You're not expected to be perfect. Omitting it may be a bigger red arrow than leaving it in, because it's going to stand out on your transcript, too.
