I am getting confused finding an overall consensus on the acceptable science gap that optometry schools recommend. Most of the spreadsheets that I find do not even mention the average Science GPA for accepted applicants but rather only the cum. GPA...is the science gpa highly considered in the application process?? And if so how high should it be?

thanks for the help.

for most of the students the science gpa is within a 0.2/0.1 range of the cumulative gpa.
science gpa that most schools like to see is 3.0 at minimum. of-course the higher the better chance you have of getting in.

You need to ask the individual admissions offices. They all look at different GPA's - some consider your cumulative and science, others just look at science, etc. If the schools aren't reporting an average science GPA, then that's probably not something they highly consider. But you really should contact them and ask.
