As long as AMCAS is in process/verified and all your LORs are in. You should take your SJTs (Casper or PREview) as soon as you are done.

Note: adcoms will likely wait until they get your official Casper or PREview scores to complete your file. You won't be late with that MCAT date if you have Casper/PREview in by then. Check the AAMC PREview schedule for the timeline when their scores come out. That said, not all schools require PREview and it's unclear schools that require PREview/Casper need the scores "early."
