Hi guys! So I'm taking the DAT soon and I have some questions.
When you finish the science section do you jump right into PAT or is there a page that comes up with a tutorial and says here is the PAT sections, direction etc?
If you finish the science section earlier than 1.5 hr, do you get a break with the leftover time or you go straight into PAT?

It jumps directly to the next section. Right when time hits 0, it brings you over to the PAT. The PAT tutorial is within the PAT itself. It's given before every type of PAT question but its going to cut into your time if you read it, so just be prepared beforehand.

If you finish the natural sciences early, you don't get a break in the sense that you can exit the testing room and use the restroom/grab a snack. You'll have to remain in your seat. You can use that time to prepare yourself mentally and then when you're ready you hit a button that will bring you to the PAT.

Does the clock on the next section start right away when time runs out or do you get to gather yourself for a few minutes before proceeding to the next section, i.e. Natural Sciences -> PAT. On DAT Bootcamp practice full length exams you click 'start' when ready to proceed.

Also, are the exam proctors quick about supplying replacement scratch paper/laminate?

There was a pop up box that said you are out of time or something and then once you click ok the timer starts for the next section.
I think it depends on the center, people have had different experiences. I only used one sheet for science and PAT, so I switched the other one out during my break.
