Deciding which and when with Career Changing Post-Baccs

I graduated with a BA in Film and Television Writing from a liberal arts college with a GPA of 3.37. After that, I took a year off to teach English abroad before moving to Los Angeles to pursue a career in writing. I've been working on film sets and production offices since the age of 18. Now, at 23 years old, I have no clinical volunteering experience, but I'd still like to invest in a strong post-bacc career changing program in order to take my pre-requisites, conquer my MCATS, get into Medical School, and become a psychiatrist.

My first question is how competitive these programs are. Of course, I'd like to get into the best program that will help set me up for my future. Some programs I've heard are Scripps, Goucher, and Bryn Mawr. What are my chances of getting into these programs with my credentials (3.37 GPA, 2080 SATS, No volunteering)? A much more reasonable question would be, what programs should I be looking into if these aren't reasonable options?

My second question is: when should I apply? Ideally, I'd like to go about the process as fast as possible as I already feel behind and "old" (okay, 23 isn't old and, in the grand scheme of things, 30 and in medical school isn't either, but i hope you know what I mean). I know how important volunteering is, so I'd like to apply to those programs promptly. However, they take a few months to be accepted into and more time to log in those hours. Should I apply now (to whatever programs may be accepting) without experience and hope I am accepted? Will it harm me if I apply two years in a row? Or should I cut my losses, gather those volunteering hours and apply next session?
