Does anyone have any information or stories regarding the possibility of deferring enrollment for a year after acceptance? I'm mostly interested in "acceptable reasons" and/or information on the policies of two schools-OHSU and UCHSC.
I'd be lying if I said that fun didn't have something to do with it, but the situation is rather complex. The prevailing reason is to finish a research project I have been working on for the last 2 years. When I applied 7 months ago I anticipated finishing before school would start, but now it is impossible. Does anyone know how valid this reason is considered and whether schools look down on an applicant for such a request?
I could be wrong, but I imagine that in exchange for granting you the option of coming a year later, they expect a commitment from you to join their school. Perhaps someone else can correct me if I am wrong.

I totally agree. However, I know someone who held on to Pittsburgh for a year on some flimsy excuse for a deferral only to get accepted at Harvard the following year. You can guess where he is going. I'm not sure if this is allowed but it appears from this one example that it is possible.
