Don’t bother with those letters. Just wait and see if they get in or not. They won’t take you because you have gotten 7 A’s.

Letters of intent don’t matter except for schools like Mayo—it’s not like football where schools gain anything by having somebody to commit

Have you gotten all of your financial aid packages yet? You have more time to construct your answer, but if you were to narrow your list to those two schools, it will help other applicants waiting at the other programs.

Overthinking can lead to regrettable mistakes. You have earned the time to decide more cautiously.

So that said, I would not mention any names of schools or number of acceptances (many offers is fine). You don't know how each program will interpret this communication, and you risk giving a reason to ignore or drop you. This isn't like getting hired where the manager wants to fill the spots quickly and there are plenty of alternates in play.

I don't know the OP's actual priorities in making a decision. It just sounds like the OP wants to game a decision and leveraging having 7 acceptances. I would recommend reaching out to the students and ambassadors who they meet at their interviews, scheduling second looks, and then deciding communicating with the schools.
