Try to get at least of 100 hours of nonclinical volunteering that involves working with the underserved (think soup kitchen, etc) so you don't have to rely on your military experience to compensate. Aside from that, a high MCAT (512-515+) will likely be needed for Vanderbilt but for your Texas schools less is needed (508-512 depending on the school). Your USAF experience will help quite a bit.

Unpaid camp counselor is not the kind of non-clinical volunteering schools are looking for.

Your best investment in this process is the MSAR. Access is very low cost and the information is invaluable. You'll see the range of scores at each school. Some schools will have this info on their websites, too, but MSAR packages it so well and can verify it because AAMC holds all the data.

Yes at the moment I am due to living there for a few years, however, I will be changing my residency this year to AZ since I do not have any more connections there unfortunately

Can you wait to move to AZ until after submitting TMDSASapp? Then you would qualify as a Texan.

Wow that's very interesting. If I stay a Texas resident, will this have a negative impact on me applying to other schools? Will they be less likely to send out IIs and acceptances due to assuming I would attend a Texas school?

There are still certain schools like ETSU that specifically value veterans as well as a couple others known to take Texans like Tulane (who is just one state over). If would be better to keep TX residency honestly like wysdoc mentioned.
