Demographic information and CAS application

I am a MS IV, completing my application and wondering how do programs collect information about their applicant's demographics (age, race, gender)etc. as it is not asked in the CAS application. Thanks for your help in advance.

When I was on the selection committee at Iowa, we didn't collect this info. I'm not sure about the other programs.
