I want to know which ones I should take before submitting my app so that med schools can see those classes on my transcript...
This is a different question than you first asked. If you haven't already fulfilled med school math prerequisites, then consider Stats +/- Calculus.
 
Bioethics and Biostatistics sound interesting, but how have you gotten through premed prereqs like physics and chemistry without calculus?
 
I want to see you take whatever is most interesting to you and do well in it.

I'm trying to decide what gen ed classes to take my junior year and I rly need some help! Which of these classes would you recommend I take before my application to medical school? In other words, are there any classes that medical schools prefer seeing before you submit the app (instead of during senior year?)

Calculus I
Public Speaking
Bioethics
Biostatistics
Computing for Scientists (a computers class)
Literature
Writing Intensive Class
Arts

If any of these classes would help for interviews, I'd appreciate knowing which ones! I can take 4 classes over the normal year…the rest I am planning to take summer after my junior year.
