On secondary applications, for essays that ask you to explain gaps in your education or explain what you are doing during your gap year, should I mention that I am actively seeking employment as a Patient Care Tech in a hospital setting due to my EMT certification? I believe that I will get a job soon, but I currently do not have one lined up.

Should I mention that I am seeking employment? Or should I just mention what I am actually already doing (volunteering, working another job) and save the patient care tech job as information to be included in an update letter?

From what I understand, it is fine to include that you're trying to be a patient care tech. If you feel confident that you will get a job soon, rather than "I am looking," say "I am planning to work as..." . Gap year essay is not a binding contract, schools just want to know what you will be up to.
