I'm a freshman in college right now and have 2 main EC highlights: Triathlon World Champs, and a semester of exercise physiology research (plus some shadowing and volunteering).

My question is if it is better to stay involved with the exercise and sports ECs or should I diversify my ECs?

I have the option of doing a sports medicine volunteer program where I would work with my school's athletic program, or I have the option to be a tutor (chem, bio, psych, calc) and then have time to do psych research as well. I'd be happy with either option.

So any advice about whether it is better to stick with one theme or better to stay diverse?

Thanks!

Do what makes you happy and don't jump all over the place. ADCOMs want to see nice long extended commitments, not a million different places that you jumped around with. Plus if you manage to do what you enjoy, you'll have a nice PS and come off genuine during interviews. Those would make some mighty fine beefy ECs.

Would it be stupid to try to do tutoring AND sports med? Does anyone have experience trying to juggle classes with a lot of ECs? How'd it work out for you?

You can do it, there's plenty of free time in college. It's always the prioritizing that people have issues with.
