Do you have some commitments for strong letters yet? How much more do they want from you?
How will this change if you tack on a research project? You say you have 3 projects going so it doesn't quite sound like you have a thesis project selected.

I don't have a thesis project yet. One of the labs I only worked 20 hours at, the other 80, and the third 300 (summer program). I have some relationships with professors, but they could be stronger. Is doing 10 hours/week of the Crisis Text Line worth it?
Do 10 hours/week at a soup kitchen instead.

Impressive. But you’re involved in too much. Quality over quantity. Having a bunch of activities under 100 hours doesn’t convey much. And I imagine you’ll take the MCAT during your junior/senior year which will end up being its own extracurricular activity….
