Was going to write about my humanities major and the added skills/perspective that it will give me in med school/ my career. Does that work?
As you're a humanities major, I hope that means you have a solid grasp of the usage, mechanics, and spelling of the English language. And while that might make you diverse in comparison with your peers (and even some of the med school faculty), it won't make for a good essay. What do you mean about "perspective?"

Regarding the perspective, I was going to discuss the focus I've developed on the humanistic dimensions of medicine, particularly ethics. I could perhaps connect this concern for ethics to work I have done in health disparities research.

My major specifically was philosophy, and I feel like that field has prepared me to think about some of the pressing questions people face. I frequently like to say that majoring in philosophy has prepared me to live "an examined life". Do you think that this kind of information would make for a good essay?

I see the potential for two interesting essays here. And I rather think the Socrates-inspired one might be the more interestingly "diverse" of the two. Go for it.
